Potato and Egg Fritata
4 Small Yukon Gold Potatoes slices very thin
5-6 mushrooms sliced thin
4 eggs
1 small onion, thinly sliced
2 slices Prosciutto---optional
1/4 cup Pizza Sauce
Thinly sliced Mozzarella
Parmesan
Olive Oil
t oregano
Using a 10 inch skillet heat 2 T olive oil,
line bottom of skillet with potatoes and onion slices.
Cook on stove top 10 minutes.
Place skillet with potatoes under a broiler 5 additional minutes.
Remove skillet from broiler and add 4 beaten eggs, top with sauce,
Prosciutto, mushrooms, and Mozzarella.
Sprinkle with olive oil and oregano.
Bake at 375for 20 minutes.
Finish under broiler for 5 minutes.
