Salmon Slaw Salad


Egg roll wrappers baked in muffin pan 350 for 10 minutes






Kicking back watching the Angels game.

Great predinner snack.


Make cups for salad:
Spray muffin pan with Pam. Line with egg roll wrappers and bake at 350 for 10 minutes.


Mix together:
Finely grade 1/4 head cabbage to make slaw.
Add 1/2 cup mangoes, chopped.
2 green onions, chopped.
1/4 cup prepared roasted red pepper chopped.
1/4 cup fried mushrooms.
2 T finely chopped cilantro.
4 T soy sauce

Crumble 1 cooked small salmon fillet into small chunks and add to mix.

Spoon into egg roll cups and serve.
