Chicken Quesadilla


3 chicken thighs
Cut chicken thighs into small pieces, roll in bread crumbs (Progresso Italian Bread Crumbs are best), and fry in olive oil

Saute:
1 cup sliced mushrooms
1/2 cup diced yellow pepper
1/2 cup diced onions
1 glove garlic, minced

Add 1 T. red wine vinegar

Warm whole wheat tortillas in Pam coated frying pan.

Layer with:

Salsa - We like Pace Salsa right off the market shelf.
Diced tomatoes, preferably Heirloom tomatoes, we are growing these in our yard.
Avocado, sliced
Gorgonzola Cheese

Cover half of the tortilla with mixture and fold over.


Serve with Watermelon chunks.

Grilled Tilapia with Mango Chutney

Mango Chutney

1/2 cup frozen mango chopped
1/4 cup diced red onion
1/4 cup diced yellow pepper
capers
chopped basil
1 small tomatoe, chopped
1/4 cup chopped green onion


Marinade Tilapia in Soy Sauce for one hour.

Using a cast iron grilling pan, sprayed with Pam and a little olive oil, grill Tilapia on each side for 3 minutes.


Serve with grilled zucchini, brushed with soy sauce and fresh corn sprayed with "I Can't Believe It's Not Butter".

Seven grand kids, two sons and great daughters inlaw.

Apparently Texas doesn't appreciate Chocolate Covered Bacon I will have to save it for California. Chocolate Covered Bacon Bits


Chocolate Covered Bacon










Fry 1 lb thick sliced bacon until crisp.
Pat on paper towels to remove excess fat.
Cool and break bacon into small pieces.

Melt 8 oz Ghirardelli chocolate bits over a double boiler, be very careful not to get any water in the chocolate,
add 1/2 t cinnamon
1/4 cup caramel sauce

Layer bacon in a Pam coated baking dish and pour melted chocolate over.

Refrigerate for about 1 hour, break into small pieces.

Zucchini Parmesan


Zucchini Parmesan











4 zucchini sliced lengthwise into 1/4 inch slices, 3 -4 slices per zucchini
grill zucchini slices in olive oil

Sauce:
1 onion sliced
1 bell pepper
1 red pepper sliced
fire roast onion slices and pepper slices
4 garlic cloves crushed
Cool and chop coarsely
Add one 28 oz can San Marzano crushed tomatoes
add 1/2 c chopped fresh basil, not cooked

Layer in a 9 X 9 baking dish:

grilled zucchini slices
sprinkle with Parmesan cheese
layer of roasted onions and peppers and garlic
spoon 1/4 c crushed tomatoes

total 3 layers of zucchini, cheese and sauce


bake 45 min at 350

top with fresh basil and Parmesan

Grilled Ahi Tuna

Teenagers are gone, time to return to Senior Serious Meals.

Ahi Tuna, grilled zucchini and brown rice.

Make the brown rice first, it takes 40-45 minutes. Cook rice in chicken broth or any stock for more flavor.

Season Fresh Ahi Tuna with cajun spice, roll in sesame seeds, brush the zucchini with olive oil and balsamic vinegar. McCormick Cajun seasoning has one of the lowest salt contents. Be sure to read labels on premixed spices, they very often have a high salt contents.

You may use the BBQ or a cast iron grilling pan.

We just bought a cast iron grilling pan, now we can grill all year long. If you buy a grilling pan be sure it is heavy, they cook much better than the light weight ones.

Preheat the grill to very hot.

Grill zucchini for 10 minutes on each side.
Grill Ahi for 3-4 minutes on each side. Ahi should be seared on both side, pink in the middle.


Top with 1 T Marmalade mixed with 1 T Balsamic Vinegar,
or you my use the old standard Aoli:
Aoli-- equal parts mayonnaise, sour cream, flavor with soy sauce and fresh minced garlic to taste.
